I was wondering of what to cook for lunch. Thinking of using things from the backyard garden for chicken rendang but unfortunately i ran out of coconut milk.

I browse the one and only recipe book in the house.

Well, it gave me an idea for a one pot (or rather one pan) chicken and potatoes.

Here what i used (mind you, im cooking for 2):

Half pc of chicken breast, cubed
1pc potato (medium size), cubed
4cloves of garlic (crushed using pastel and mortar – yielded 1 teaspoon)
1medium onion – chopped
2 medium tomatoes, cubed
3 bird chillies – chopped
2 tablespoons oil

In a pan, heat the oil and stir in the garlic, saute for a few seconds. Put in the chicken and potatoes. Stir so the two mixed well with the garlic. U can let the chicken and potatoes frying for a few minutes, with your pan covered.

The pan cover will make the pan sweat, no worry, thats what we need. Fry until the chicken turned white and the water from the chicken dried.

Put in the chopped onions and mix well, fry until the onion became translucent. And yes, please put the pan cover, just stir occasionally. Finally, add in the tomatoes and chillies. Immediately toss in half teaspoon of salt and cover the pan for a minute or two.

Stir the tomatoes and cook until the tomatoes become gravy-like. Dont forget to taste for saltiness, that is according to your own preferences.

This is good with white rice or bread of your choice.

Simple and easy, no? Good recipe for a busy working person like yours truly.

By the way, you can change the chicken to any other meat, but the cooking time will change with kind of meat you choose.
