Its 22nd Feb and i am typing this while listening to speeches at Pullman Hotel. We are having Chinese New Year celebration during the last day of the festival and my SOCOM team is the backbone.

So i was very busy last week, leaving office late due to the meetings for our event.

Anyhow, i had two days off last weekend to recharge and to look at what i have for my MBC.

Still remember the Maybelle flowers? I made four of them, crochet their squares and toy around with what to do with them.

And i also thought of making a small bag with these four flowers but i decided not to as i dont need more bags (as if).

As to not to run away from my project, finally i made a decision to try to size the flowers so they could go along with my blanket.

So i crochet the border and here is how ill position the squares roughly

Hope it will turn out okay once completed.

So thats my update so far. I already have 21 squares as at yesterday for feb (pheww i’m up to date albeit the crazy week).

Right, one picture of the small garden. My pot of plumed cockscomb bloomed (yeay). Here’s a picture 🙂

I have been craving for some cakes. Last week i wrote an email to my dear girls, asking for a recipe of the heart warming oatmeal cake baked for me when i visited Dubai in 2013.

The reply arrived and i was eagerly waiting for the weekend to bake and spoil my diet silly. I posted some pictures on Instagram and a few friends messaged me for the recipe.

Here it is… I copy and paste from the original email 🙂

1 1/2 cups boiling water
1 cup oats
Pour boiling water over the oats in a bowl and set aside.

1/2 cup butter/margarine, softened
1 cup brown sugar
1 cup white sugar
Cream these together well.

2 eggs
1 tsp vanilla
1 1/2 cups plain flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt

Beat the eggs into the cream one at a time. Mix in the rest of the ingredients. Stir in the oatmeal mixture. Bake in greased pan for 30 – 35 minutes.

Topping:

6 tablespoons butter or margarine
3/4 cup brown sugar
3 tablespoons cream or milk
3/4 cup dessicated coconut
3/4 cup chopped walnuts

Put all ingredients into a saucepan. Heat and stir to melt butter and dissolve sugar.

Once the cake is baked, spread this topping over the cake, and broil six to eight inches from heat until browned and bubbly. (I don’t have a broiler, so I have always put the cake on the bottom rack in the oven and baked the topping with the oven door slightly open. If your oven has a heating element or fire at the top, then you can broil it there.)

There you go. Mine look like this when done:

I did not wait for an hour for the cake to cool down before i cut it. I cant wait that long!

we should all try to eat healthy. a lot of times the bf mentioned about the bad side effect of this and that, and dont really eat dishes made with coconut milk.

i hence tweak my normal chicken curry recipe for one without coconut milk.

it tasted good, Alhamdulillah. I made it for lunch today and somehow felt i should have made more!

anyhow, if you would like to try this, here is the recipe:

1pc chicken breast (cubed) – since im cooking for one meal, i used half of the breast only

1pc medium potato – cubed

1pc medium onion – chopped
4pcs garlic – chopped coarsely
1/3 part of chicken stock cube

a handfull of coriander leaves and the stalks (i chopped them coarsely, separating the stalks and the leaves)

2teaspoons of curry powder – make it a paste by adding some hot water. I used meat/chicken curry powder by Baba’s

right. in a deep pan, heat up a few tablespoon of oil. fry the onions, garlic and the chicken cube till the onion turns a little golden. Then add in the curry paste. Fry for a few minutes, or until the water dried out from ur paste. in malay we call it “pecah minyak”. Toss in the coriander stalks.

add in the chicken and potato. Mix well and add in half cup of water. Stir a while and cover your pan. You should leave the curry to simmer, stirring occasionally.

Cook until the potatoes are cooked through and your curry gravy become a little oily again. finally toss in the corriander leaves and thats all.

Oh ya, please taste the gravy for the salt. I only added a pinch or so. Very healty isnt it?

I was wondering of what to cook for lunch. Thinking of using things from the backyard garden for chicken rendang but unfortunately i ran out of coconut milk.

I browse the one and only recipe book in the house.

Well, it gave me an idea for a one pot (or rather one pan) chicken and potatoes.

Here what i used (mind you, im cooking for 2):

Half pc of chicken breast, cubed
1pc potato (medium size), cubed
4cloves of garlic (crushed using pastel and mortar – yielded 1 teaspoon)
1medium onion – chopped
2 medium tomatoes, cubed
3 bird chillies – chopped
2 tablespoons oil

In a pan, heat the oil and stir in the garlic, saute for a few seconds. Put in the chicken and potatoes. Stir so the two mixed well with the garlic. U can let the chicken and potatoes frying for a few minutes, with your pan covered.

The pan cover will make the pan sweat, no worry, thats what we need. Fry until the chicken turned white and the water from the chicken dried.

Put in the chopped onions and mix well, fry until the onion became translucent. And yes, please put the pan cover, just stir occasionally. Finally, add in the tomatoes and chillies. Immediately toss in half teaspoon of salt and cover the pan for a minute or two.

Stir the tomatoes and cook until the tomatoes become gravy-like. Dont forget to taste for saltiness, that is according to your own preferences.

This is good with white rice or bread of your choice.

Simple and easy, no? Good recipe for a busy working person like yours truly.

By the way, you can change the chicken to any other meat, but the cooking time will change with kind of meat you choose.

We checked in during the 1st day of Eid, I understand that the hotel was fully booked. The l checks in was fast and i like the Front Office Manager, Azian. She was polite and all smile.

When we stepped in the room, however, the bad smell from the carpet took all my good first impression away. We quickly opened the window so fresh air can come in.

Then i stepped in the washroom and there is no towel what so ever. I think the house keeping forgotten to replenished the washroom. I dont even have the bath mat and i really HATE wet floor.

So i rang the house keeping, told the guy i just checked in but no towel. He asked if i need some. What a joke. Of course the towel arrived after our SECOND call requesting for them.

The bedding, even tho its king size, is so not comfy. The bed was old, the comforter seems so thin (maybe from years of usage), the pillows are old and flimsy. We used three pillows stacked together and share it the rest of the night.

The food at breakfast was poor, maybe because we came down for breakfast at 945am and they didnt replenish it.

Overall, i think i paid a lot of money for very little pleasure.

Said all I want from you is to see you tomorrow, and every tomorrow, maybe you’ll let me borrow your heart.

And is it too much to ask for every Sunday, and while we’re at it, throw in every other day to start.

I know people make promises all the time.

Then they turn right around and break them.

Wow, long time no see!

A few people started to ask if i ever will update my blog. I know i have been given myself a long break, but i cant help it. I was, hmm, am still very busy juggling everyday life.

Anyway, when i woke up from a very long sleep last night, i saw a post on instagram. It was posted 2 weeks ago and odd enough i didnt see it.

It made me smile. Made my morning! Here is is, i made a screen shot of it 🙂

Now now, i am used to get words of encouragement every now and then, but NEVER anyone will say that i am inspiring.

Need to look up the meaning of the word… Hehehe
